Begin your day with a visit to the vibrant Hoi An market, where you will spend about an hour and a half discovering the colourful array of fruits and vegetables found in the stalls of central Vietnam. You will learn about the natural benefits of these ingredients and how they are used in Vietnamese cuisine for both flavour and health.
During the market visit, you'll also have the opportunity to taste some surprising local products. From the market wharf, we'll take a boat to a small island nestled in the delta of the Thu Bon River. This island is home to a charming village that has preserved its authentic character over time.
Here, you'll have the chance to meet my grandmother, who resides in our ancestral family home. Under the cool shade of the garden, you will learn to make your own rice cakes while I explain the secrets of traditional central Vietnamese cuisine. Once you have prepared the dishes, you'll be able to savour them in peace under the swaying coconut trees, enjoying the serene atmosphere of this tranquil setting.
We will cook together 4 dishes:
- Banh Xeo (small pancakes made from rice flour) Hoi An style.
- Grilled pork skewers marinated in a special sauce
- Green papaya salad
- Fish cooked locally
Vegetarian menu (available on request with the main course)

After the meal, you will go on a bike ride through authentic Vietnam. By crisscrossing the small paths, you will discover shipyards where traditional wooden boats have been built in the same way for centuries. You will learn the manufacturing secrets of the famous mats. You will learn all about the work in the rice fields, you will see how rice wine is made and much more. You will walk in the middle of sumptuous landscapes and meet wonderful people.
